While Sodexo, Compass, and Elior still largely dominate the institutional food service market, the sector remains highly fragmented. Hospitals, nursing homes, companies, embassies, schools, and the armed forces—a vast number of organizations rely on these groups, which are capable of providing meals for the members of a specific community at a reasonable price.

History, core business, values, key figures - get to know France's largest contract catering companies!

1. Sodexo, the world leader in foodservices

The leading player in the institutional food service sector is Sodexo. The company was founded in 1966 by Pierre Bellon in Marseille. Between 1971 and 1978, it took its first steps into international markets, expanding into Belgium, Italy, and Spain, followed by Africa and the Middle East. The company then went public in 1983.

Sodexo promises its customers an authentic and gourmet dining experience, a wide variety of choices, access to the expertise of talented chefs, healthy food, and responsible sourcing. Through various services such as CROC’ (school meals) and Toqla (corporate catering), the company is committed to improving the daily lives of millions of people around the world—because, yes, a meal can truly make a difference in someone’s day, regardless of their age or circumstances!

The Sodexo Group in figures :

  • 412,000 employees worldwide, including 35,000 in France,
  • 100 million consumers a day in 56 countries.

2. Elior, creativity at the service of contract catering

Another major player in the sector was founded in 1991: the Elior Group. After acquiring the catering companies Les Repas Parisiens (LRP), Hôpital Service (in the healthcare sector), Vivaë, l'Alsacienne, and Ansamble, Elior gradually established itself as one of the leaders in the institutional catering market in France. In 2019, the group decided to discontinue its concession-based foodservice operations, which were grouped under the Areas brand, in order to refocus on its core business—that is, institutional foodservice.

This company has a clear ambition: to be the leading restaurant chain through a strategy based on five core principles:

  • offer tasty, creative recipes to make mealtime a real pleasure,
  • guarantee food safety,
  • being a responsible employer,
  • respect the environment,
  • innovate.

She is reinforcing this strategy by focusing on the following six areas: customized dining, nutrition for all ages, local products, initiatives to reduce food waste and plastic use, staff training and talent development, and the fight against inflation. This is how they manage to stand out from their competitors and offer their customers real added value

Elior offers a food service solution tailored to all types of diners and all mealtimes: from newborns in daycare centers to high school students, as well as adults at their workplaces and patients and healthcare providers in healthcare facilities.

Elior in figures :

  • an excellent nationwide network with more than 9,500 locations throughout France,
  • more than 850,000 meals served in schools (400,000), businesses (300,000), and healthcare facilities (150,000),
  • more than 20,000 employees (kitchen, service, management).

3. Compass, tailor-made catering

The company's history dates back to 1960, when Eurest was founded. Compass Group acquired the company in 1977. It subsequently merged with SHRM, and went on to acquire, take over, sell, and establish several companies. Since its inception, Compass has been guided by a guiding principle: to offer high-quality, innovative service to everyone who enjoys its meals.

Compass prides itself on a personalized approach tailored to the nature of each facility, as well as a creative culinary experience. Through its brands—Exalt for businesses, Medirest for healthcare and medical-social facilities, and Scolarest for schools and local governments—the group offers solutions that are closely aligned with each client’s specific needs.

Compass Group France in figures :

  • more than 13,000 employees,
  • nearly 155 million meals served every year,
  • 2,240 client establishments.

This company specializes in institutional food service for healthcare facilities (hospitals, clinics, nursing homes, senior living communities, etc.) and is committed to improving the lives of vulnerable individuals. Recognizing the impact that good nutrition has on the daily lives of patients and residents, Restalliance places their comfort, enjoyment, and well-being at the heart of every meal by offering appetizing and generous dishes. To this end, the company pays particular attention to the quality, freshness, and seasonality of its ingredients.

Restalliance in figures:

  • 3,200 employees,
  • 30 years of experience

 5. Arpège, top-of-the-range contract catering

Arpège is a subsidiary of the Elior Group. It is considered the group's "urban style" brand.

Arpège positions itself as a premium corporate catering service. The brand views the lunch break as a real opportunity to enhance employee well-being

At the brand’s 120 partner restaurants, you’ll find an experience that’s still relatively rare in institutional dining: food courts. Employees can dine at one of these six mini-restaurants: Le Passe (bistro), Sensé (100% vegetarian), Da Gino (Italian), Zesté (salad bar), Brut (meat, poultry, and fish), and Léché (desserts). All of these upscale dining options, however, share a few common traits. Among them: taste, a balance of flavors, discovery, and wonder.

Takeout, room service, event catering, flexible dining options, and all-day service—Arpège’s offerings are extremely diverse.

Arpège in figures:

  • 30 years of expertise,
  • 70,000 meals a day,
  • 1,700 employees.

6. Ansamble, a company with a mission

Now it’s time to get to know Ansamble, another key player in the institutional food service industry. The company was founded in 1978 in Vannes, in the Morbihan department. At the time, it was known as Breiz Restauration before becoming Ansamble in 2002. The following years were marked by expansion across the entire country. It later became part of the Elior Group. It is the first company in the institutional food service sector to display the Nutriscore and Carbon Score on its menus.

Ansamble is a mission-driven company. What does that mean in practice? It means that it is not driven solely by the pursuit of profit. Rather, it seeks to balance economic performance with contributing to the public good on social, societal, and environmental fronts.

It is designed for early childhood education and care facilities as well as businesses and medical-social organizations. It makes it a point of honor to nourish its guests at every stage of their lives by offering them a diet based on four pillars:

  • to promote the health of as many people as possible through a healthy and balanced diet,
  • contribute to the development of the regions where it operates by using local products sourced through short supply chains,
  • provide employees with pleasant working conditions and surroundings,
  • Protect the environment by carefully selecting products and reducing waste and plastic use.

7. API Restauration, a family business

API Restauration—perhaps you've heard of it? This family-owned business was founded in 1956. It started out as a deli and catering shop. Gradually, it shifted its focus to delivering meals to company cafeterias, a sector in which it quickly experienced strong growth.

API Restauration’s cuisine is designed to be responsible, healthy, and delicious. The chefs put their talent and creativity to work for our guests while prioritizing high-quality ingredients and the use of local and seasonal produce. The recipes are systematically reviewed by a team of 80 dietitians and nutritionists whose job is to ensure that everyone’s nutritional needs are met

Working with Convivio means choosing a company on a human scale that combines customized catering solutions with authentic, responsible cuisine tailored to the needs of its guests. Convivio is committed to providing high-quality culinary services to its target audiences: working professionals, children and teenagers in schools, and seniors or people with disabilities living in medical-social facilities.

Companies, embassies, clinics, hospitals, government agencies, and schools—many organizations choose to entrust the management of their cafeterias to the Newrest team. Part of its success stems from the selection of products, which are then elevated by the chefs. Sogères places taste, freshness, and seasonality; relationships with trusted partners; environmental stewardship; and local expertise at the heart of its food procurement strategy. Passion, culinary excellence, and generosity reign in the group’s kitchens. And all of this comes through on the guests’ plates!
